Dreary Days and Sweaty Nights
Sweaty nights: as in "work it out or get your butt to the gym". Why does this aspect of staying healthy seem so daunting? Because the couch is comfy, your favorite show is on, or you're just plain lazy. Sometimes I'm all three...and dammit, that just "ain't gonna work". I discovered a new app for my iPhone: Sworkit. What a cool app...you choose your duration and the type of workout you'd prefer. Easy, quick, and you can do it during your favorite show!
Earlier this week, I was doing a full sequence of yoga and got into the warrior position...just as I was about to lean down into the next one , Tank jumped my leg (to do the deed) and knocked me over. So, yeah...we have some kinks to work out, but we'll get there. I guess I could lock him in the bathroom? Jumping jacks are the worst. For some reason, they get him really excited and he has to hump my leg. I know, jacks are so sexy!
It's a dreary, gray, rainy day in Anchorage - the kind that makes you want to curl up with a good book. In an effort to combat the "I think I'll skip my workout and smoosh my ass into the couch" mantra...I think I can find a kick-ass workout on the Sworkit app or hit the elliptical with my book!
In order to combat the "comfort food" feeling that a dreary day brings, Fitness has offered up some fabulous "fat fighting" breakfast ideas! My favorite breakfast of late has been a cup of ground turkey, seasoned with spices and scrambled with three egg whites. Yum!

Eggie Cups:
May be prepared and baked in advance for those 'I'm really effing late' kinda days. Yields 1-12,000 cups.
muffin/cupcake pan
pam cooking spray, veg oil, or the like
eggs (or whites only)
red, white, or green onion, diced
fresh spinach
low-fat feta cheese
sliced ham or turkey
s&p to taste :)
Optional: french baguette
Spray muffin pan lightly with Pam or cooking oil, line with ham/turkey slice, and form a cup to hold egg contents.
Crack an egg (or whites only), lightly scramble, and drop it in, 2/3 full or one egg per cup.
Sprinkle spinach, diced onion, and feta on top and bake at 375 deg for approx 10-12min. or until eggs are firm.
Allow to cool for 5 min. and use a butter knife to loosen from pan. Can be made in parchment cups or silicone for on-the-go meals, too!
Variation: First line cups with french baguette slices, then fill with eggs, toppings, and ham/turkey and don't scramble the egg. The bread will toast slightly and be the perfect addition to gooey over-easy eggies. Bake approx 7-9min. for over-easy, 10-12min. over-hard.
