Chicken Fingers and Onion Rings
In an effort to be golfing, sunning myself poolside, and enjoying sunshine in Arizona, I put myself back on the South Beach diet. SB works, but the NO beer clause is difficult for me, so I make sure to cut back on other carbs. And you can only eat so much chicken before you want to throw your plate against the wall and grab some ice cream. I'm here to tell ya, I discovered a fantastic chicken tender type recipe...in fact, it's even on the side of the box! 

1 can French Fried Onions (I like the cheese ones)
2 large chicken breasts (thawed)
1 egg
Salt, Pepper, whatever...
Crush up the entire can of onions. Dip your chicken breasts in egg and roll in the onion crumbs. Bake at 400` for 20 minutes. Holy smokes - I thought I was eating fried chicken - sweet! I promise you'll like it - or you'll get your money back.
